Roast Beef



1.5 lb beef roast - chuck, shoulder, round

2-3 small turnips
1 med onion
2 carrots
1 rib celery
2 med potatoes

Put meat in baking dish. Wash, peel and chop vegetables. Put in dish on and around meat. Season with salt, pepper, garlic, thyme, rosemary. If meat is very lean add 1/4 c water. Cover with tight lid or aluminum foil. Bake 350 for 1-1.5 hrs. You can remove lid near the end of cooking if you want it to brown more but the meat should be moist and starting to fall apart.

Pot Roast
If the meat quality is not very good - you can put the meat and vegetables in a pot. Sear in oil til browned. Cover w/ 1-1.5 cup or water and simmer covered for 1-1.5 hr.

Either way you can make gravy from the drippings in the oven dish or from 1 cup of the pot roast liquid.
Left over beef can be cubed and frozen for another recipe later.
