Bread Pudding
This version has apple chunks and cinnamon and raisins. Bread, milk and eggs make it a nutritious dessert.
2 med apples diced
1/4 c raisins
5-6 cups bread chunks (I save all the heels from my bread in the freezer and break it up frozen)
2 cups milk
1 cup fruit juice - or another cup of milk - I used coconut juice for this one
1/3 cup sugar
3 eggs
1 tsp cinnamon
1 tsp vanilla
Put the bread chunks and raisins in the 9 x 14 baking dish. You can grease it if you want. Pour the milk and fruit juice over it and let it stand while you cut up the fruit and scramble the eggs with the sugar. Mix it all together with the soaked bread mixture. Bake at 350 for about 40 min.
Variations. This can be varied many ways. Coconut and pineapple with pineapple juice is another one I make. Fresh grapes (cut in half) are good. Soft fruit like berries or bananas are not. Fresh peaches are good canned ones are not. You can leave out the cinnamon and add nutmeg instead. Cut the fresh fruit up small so it will cook well. You can also use a can of fruit cocktail.
Whipped version: if you want to make it a little fancier - separate the egg whites from the yolks. Make as above using only the yellows. Then whip the whites until they stand up stiff and fold them into the rest of the pudding mixture. This results in a lighter pudding -but it is harder and you need to put a little pan of water in the oven with it when you bake it.
OR Microwave - the whipped version works well for microwaving. Put in a ring dish and consult your microwave guide for power and time.
