Salmon Patties
Use the bottom of a cup to mash crackers into crumbs in a deep bowl without making a mess.
1 tall can of salmon
1/2 c cracker crumbs
2 eggs beaten
1/8 tsp salt
pepper
2 tbsp oil
Drain salmon. Flake it (I remove the big pieces of skin and bones.) Mix with the cracker crumbs, seasonings and eggs. You can chill this mixture (make sure to seal it good in the refrigerator because it smells fishy) until you are ready to shape it into patties. Make 6 balls out of the fish mixture and flatten them into patties. Some people coat them with cornmeal at this point but it is not necessary and the cornmeal burns easier. Heat oil in skillet on med-low brown (not fry) patties on both sides - about five minute a side.
