Tuna Cheddar Chowder


A bowl of tuna cheddar chowder is quick and easy.

1/2 med onion diced
2 -3 tbsp diced celery
2-3 tbsp diced green pepper
1 med carrot scraped and diced
1/2 c broccoli florettes (pieces smaller than an inch
2 tbsp oil
2 tbsp flour
1 cup milk
1 can tuna
1 cup water
1 teaspoon chicken bullion
2-3 oz shredded cheddar cheese
dash tabasco salt and pepper

Brown all the vegetables in the oil. Add flour and brown. Add milk and water and bullion. If the tuna is packed in oil drain it before adding, if not add the tuna undrained. Don't flake the tuna - leave it a little chunky. Simmer slowly until the veggies are tender. Add cheese. Stir and simmer until the cheese is smooth and the soup is thick.

Variation: Use 1/2 can salmon. Use corn and potatoes instead of broccoli and carrots.
