Tamale Pie
This is a good easy dish from some leftovers, ground beef and cornmeal.
1/2 lb ground beef
1/2 med onion chopped
2-3 tbsp chopped green pepper
2-3 tbsp chopped celery
1 can tomato soup
1 can corn (or some frozen leftover corn)
1 can red beans or some leftover pintos or redbeans or black beans
1 cup water
1 tsp beef bullion
dash garlic powder
1-2 tbsp chili powder
dash salt
1 c cornmeal (cornmeal mix)
1 egg
1/2 c milk
1 tbsp oil
Brown the ground beef, onions, peppers and celery. Add corn, beans, tomato soup. Add water if the vegetables were drained. Add bullion, and other seasonings. Simmer this mixture for 10-15 min while making cornbread topping. Preheat oven to 425
Mix egg and milk together. Stir them into the cornmeal. When mixed add oil and stir. The batter will be thin. Put beef mixture in bottom of 9x13 casserole and drizzle the cornmeal mixture over it evenly. Bake 20-25 min uncovered. The cornbread will disappear and then rise.
