Minestrone
This filling soup is made easy with leftovers.
1/2 lb roast beef (frozen from previous roast) cubed
1/2 med onion
2-3 tbsp celery
2 carrots scraped and sliced
1/2 c diced cabbage
2 tbsp oil
about 1/2 can each frozen leftover vegetables (I never use a whole can so I put up leftovers in the freezer) but you can use canned: Corn, spinach, flat greenbeans, green peas
1/2 can tomato sauce
2-3 c water
2-3 tsp beef bullion
1/2 c pasta (I also never use all the macaroni in a box of macaroni and cheese - so I put 1/3 of the macaroni up for other things before I cook it, then make the rest according to the directions and it is extra cheezy)
Salt, pepper, oregano,thyme, basil
Brown the meat, onions, carrots, celery and cabbage in oil (olive is good). Add the rest except the pasta. Bring to boil, add pasta. Lower heat and simmer 30 min.
