Egg Casserole

4 eggs
1c milk
5-6 slices of bread
1/2 med onion
2-3 tbsp celery
2-3 tbsp green pepper
1/2 c grated cheese
italian seasoning
crumbled cooked sausage or bacon(optional)

Brown the vegetables in a skillet and grease, cool a little. Beat the eggs in a bowl with a the milk and salt and the seasonings. Tear up the bread into 1-2 inch chunks. Put the bread into a greased small casserole dish. Stir the rest of the ingredients into the casserole dish lightly not to mush the bread. Bake at 350 for about 30-45 min. This will make enough for leftovers the next day.
