Farmer's Breakfast

3-4 eggs
1/2 med onion
3-4 tbsp celery
3-4 tbsp green pepper
2 med potatos cooked and cut up. You can use drained canned potatos if you have to
1/4 c grated cheese
crumbled cooked bacon or sausage, or ham
salt pepper and seasonings

Brown the veggies in oil, add the meat and toss til warm over med-lo. Stir the eggs and seasonings together with a tbsp water and pour over the meat and veggies. Lower the heat, stir and turn like scrambled eggs. When the eggs are about set (2-3 min) add the cheese on top and cook til melted. Watch that this does not burn on the bottom if you have a thin skillet, if it starts to just turn it over or scramble. But wait til the very last to add the cheese or it will burn and stick.
