Peanut Butter Cookies
1/2 c (1 stick) butter
1/2 c sugar
1/2 c brown sugar - packed
1 egg
1 c peanutbutter
1/2 tsp salt
1/2 tsp baking soda
1.5 c all purpose flour
1/2 tsp vanilla extract
Set butter out into bowl to get to room temperature.(Keep the butter wrapper.) When the butter is soft, preheat the oven to 375, then add sugar, peanut butter, vanilla and eggs to the butter. Mix well. Sift the other dry ingredients into the bowl and stir together. Make balls about 3/4 inch round.
Use the butter wrapper to grease the cookie sheet.
Arrange the balls on the cookie sheet. Take a fork and a glass of water. Dip the fork into the water then use the fork to make the familiar crosshatch on the top.
Bake the cookies for 15 min.
These cookies will come off the sheet easily after a minute or two.
Lift off the cookies with a spatula and set them on a platter to cool. Put the next batch of balls on the sheet, fork them and bake.
Note this makes a lot of cookies. The picture here is half of the batch that I made one night. I put the dough in the fridge and made the rest the next day.
