1-1.5 lbs young yellow squash sliced 1/4" thick
1/2 med onion
2-3 tbsp bacon grease or: 1 tsp oil and 2 tbsp butter
Heat oil in skillet med heat. Add squash. Fry, turning frequently about 5 min until squash starts to brown. Add onions. Fry some more until onions are starting to get translucent. Sprinkle liberally w/ salt and black pepper. Lower heat and cover. Fry slowly until squash is done, starting to fall apart. Remove lid, raise heat and fry until the squash is limp, and golden brown.
