1 cup frozen cooked chicken meat
1/2 med onion
2-3 tbsp chopped bell pepper
2-3 tbsp celery
2 tbsp flour
2 tbsp butter or oil
1 tbsp diced jalapeno
1/2 tsp chicken bullion granules
dash each cumin, tabasco
2-3oz (1-1.5 c) shredded mix of cheddar/pepperjack cheese
1 cup milk

Preheat oven to 350
Put meat and vegetables in a skillet. If they are frozen add a little water and let them simmer till thawed. Add the oil and brown lightly. Sprinkle with flour and brown the flour,meat and vegetables. Add milk stir well and lower heat. Stir 1-2 min til thickened slightly. Slowly add and stir in the cheeses. Take off the heat and stir til smooth.
In 1.5 qt casserole dish put a layer of tortilla chips. (Santitas are a good mexican style chip, you will have to omit flavorings and salt if you use something like Ranch Doritos.) Then a layer of chicken cheese sauce alternate until you run out - or just mix it all together. Bake covered 20 min. Uncover and bake 5-10 min to crisp top.
Variations: Use ground turkey - brown in oil with vegetables.
Easier SW Chicken Casserole
Brown meat and vegetables. Omit flour. Add 3/4c milk and 1 can condensed nacho cheese soup. Omit cheese, jalapenos and seasonings Proceed as above.
Or use 1 can condensed cream of chicken soup and layer the cheese in between with the meat/sauce and tortilla layers.
