1/2 lb ground beef
1/4 onion diced
2-3 tbsp celery diced
2-3 tbsp bell pepper diced
1 can tomatos (stewed or diced)
3/4 c white rice
1 c water
1 tsp beef bullion
1 + tbsp chili powder
1/4 tsp cumin
garlic powder
Brown over med hi heat onions, pepper and celery with ground beef. Drain. Add rice, stir rice browning lightly. Add rest of ingredients. Bring to boil. Lower heat to simmer cover and simmer 15 min. Check and see if rice is done (splits) or if it needs more water. You might have to check and add a few tablespoons of water every once in a while until the rice is done (this is like a Spanish dish called a 'pilaf'). This makes more than enough for two. Top with grated pepperjack cheese, or sour cream and avocados.
